Celler Pardas ‘Sus Scrofa’
Penedès, Catalunya, Spain 2016, Organic
The Sumoll grape resurrection is part of a recent trend championing native grape varieties that may have fallen out of favor, usually post phylloxera, and exploring their potential once again. Ramon Parera and Jordi Arnan at Celler Pardas see working with Sumoll (and making single varietal dry wines from traditional Cava varieties Macabeo and Xerel-lo) as the new frontier for their generation. The estate, 200 to 300 meters above sea level, surrounded by coastal Mediterranean forest seems a perfectly striking setting to pen a new chapter in the profile of such a delicious, yet near lost in time, grape like Sumoll.
